Soaked what????

Well, I finally did it!  I finally made one of the recipes that Ive been learning about in the clean eating ecourse Ive been taking.  Today I made Soaked Whole Wheat Pancakes.  They were yummy!!  Although it was my first time and I was missing baking soda they turned out pretty good.  Knowing that they are healthier then the boxed pancake mixes that we normally use made them taste even better.  They were very fullfilling and the boys asked for seconds!   Of course my first attempt didn't occur with out mishap!  I tried to cook them in my iron skillet as directed but it was either too hot or too cool to cook them right.  You will see in the picture the burnt ones on the bottom.  I moved along to the griddle then and they cooked great.  I may not have left them on long enough or the missing baking soda caused them to be a little gummy in the middle, but I actually liked that texture.  I certainly will try them again.  I don't care who you are anything smothered in real maple syrup is a winner!!  :)

Cancer

At 34yrs old my body is beginning to rebel.  Ive recently had some health issues that have required a specialists input.  So several months ago I had a colonoscopy at which time they found an 8mm precancerous polyp that they removed.  I was extremely weirded out.  1% of the population between ages 30 and 50 have colonoscopies and 1% of that have polyps!  My doctor told me that I will have to get additional tests every three years.  My boys should have one prior to age 30 and then every three years after.  I got to thinking that if I was at risk and my children were at risk my 36 yr old brother would be at risk.  So I begged him to get tested.   Thankfully he didn't put me off and got a colonoscopy right away.  His news however was not as promising as mine.  He was diagnosed with 1 precancerous polyp and 1 cancerous polyp!  This news has freaked me out even more then I already was.  

One of the girls in our MOPS group has been learning about whole foods and Gods plan for those foods.   She guided me to a website where I started taking an ecourse.  I have learned so much. Ive always believed in being more one with nature.  Eating foods that haven't been processed until can no longer identify what they are can't be good.  I feel that learning new methods of cooking and eating whole foods will better my chances of surviving what could be.  Maybe in the process I will also save my children from this horrible fate.  What could be better then eating real healthy as God intended foods?  Im looking forward to everything Im going to learn.  Hoping that when I share it with my brother he will be as open to change as I am.
